Ingredients required
- Finely grated carrot-2 cups
- Flour-2 cups
- Eggs-3 pieces
- Shredded coconut (sweetened) – 1 cup
- Crushed pineapple- 1 cup
- Chopped nuts- 1 cup
- Vanilla extract- 1 teaspoon
- Salt-1/2 teaspoon
- Baking soda- 1 teaspoon
- Ground cinnamon- 2 teaspoons
- Sugar- 2 cups
- Canola oil- 1.5 cups
Ingredients for cream cheese frosting
- Confectioners’ sugar- 3 cups
- Softened cream cheese – 6 ounces
- Softened butter – 6 tablespoons
- Vanilla extract – 1 teaspoons
- Some chopped nuts
How to prepare?
Take a large pan and take the ingredients one by one and start stirring. You have to make sure that there are no lumps formed. Keep beating the mixture until turned into a smooth batter. Transfer the mixture to a nicely greased baking pan and bake it for around 1 hour at 350 degrees Celsius. Cool the cake and then coat with the frosting and include some nuts as well.
