Ingredients required
- Flour- 1 cup
- One whole egg
- One egg yolk
- Baking powder- 2.5 teaspoons
- Sugar- ¼ cup
- Yellow cornmeal- 1 cup
- Baking soda – ½ teaspoon
- Salt- ¾ teaspoon
- Buttermilk- 1-1/4 cups
- Canola oil – 1/3 cup
- Whole kernel corn – ¾ cup
How to prepare?
Take a large bowl and mix all the ingredients one by one. You have to keep in mind that no lumps are formed. Transfer the mixture in small muffin baking tray and bake for around 15 to 20 minutes at 400 degrees Celsius. Cool the muffins for 5 minutes before adding any frosting or serving to the guests.
