Ingredients
- A Salmon Fillet
- Half tablespoon salt
- I tablespoon black pepper
- 2 tablespoons lemon juice
- 4 fresh dill sprigs
- 1 cup chopped peeled cucumber
- Half cup fat sour cream
- 1/4 th cup sweet red pepper
- 3 tablespoon drained capers
- 8 cups lettuce
- I peach
- Half cup hazelnuts
- Half cup blueberries
- 4 onion rings
How to make
Place salmon on a greased baking dish. Sprinkle with salt and pepper. Brush on lemon juice with dill sprigs. Bake at 425° for 15-18 minutes until the fish is well cooked. Tear into large pieces. Mix cucumber, sour cream, red pepper, snipped dill, capers and remaining pepper and lemon juice. Divide the lettuce in four plates. Dress with peach, hazelnuts, blueberries, onion and salmon. Serve hot.
