4 medium size tomatoes,
1 medium size onion,
2 cloves of garlic,
1 tablespoon of butter,
1 tablespoon of vegetable oil,
110 ml. water (1 teacup),
1 tablespoon of all purpose flour,
1 coffee spoon of tomato paste.
4 cups of water (800 ml.),
1 coffee spoon of salt,
To use while serving ;
Grated cottage cheese, croutons.
Process of Roasted Tomato Soup Recipe
Firstly, wash the tomatoes and cut them in 4 pieces and place them on a baking sheet in to a tray.
Peel the onion and cut it in 2 or 4 pieces then place also them in to the tray.
Do not peel the cloves of garlic and place them in to the tray.
Roast all of them in the preheated oven at 200° – 250°C.
After roasting them, peel the tomatoes and garlic and chop them.
Also chop the onions.
In a deep pot, put the butter and the vegetable oil and heat.
Add the flour and cook it by stirring until the flour has lost its raw smell.
Then add the paste and cook by stirring.
Add the roasted and chopped onion, tomatoes, garlic and pour 1 teacup of water and leave it to boil.
After it starts to boil, cover the lid and leave it to boil for more 5 minutes at a low heat.
Then use a blender for a smooth and creamy texture and add 4 cups of water.
Finally add the salt and stir then leave it to boil.
After it starts to boil, again make the heat lower and cook for more 5 or 10 minutes.
Then turn off the stove and pour them in to bowls and serve hot.
If you want, add the soup bowls grated cottage cheese or croutons.
This tomato soup recipe is for 4 or 5 people.
